Seville Estate 2021 Old Vine Reserve Pinot Noir

inification: Fruit is handpicked and sorted in the vineyard. Single ferment with around 20-30% whole bunch. Must is cold-soaked for 4 days, then natural fermentation occurs with no temperature control. Malolactic fermentation occurs during primary. Open ferments are pumped over daily. Wine is gently pressed off skins and transferred to French oak for barrel maturation on lees in 30% new oak (300 & 500L barrels). The wine is not filtered or fined but allowed to clarify naturally in the cellar before bottling. This minimal handling maximises delicate "Pinot character" flavours

Winemakers Notes: "The 2021 Pinots are delicate and finer than those of 2020, reflecting the cooler season and showcasing classic 'Upper Yarra' characters. They evoke the 2012 vintage, combining purity, prettiness, structure, and concentration—a perfect balance of power and elegance."
